Instructions
- Combine the chia seeds and almond milk in a medium-sized bowl, stirring well to combine.
- Add the vanilla extract and optional sweetener, mixing thoroughly until well distributed.
- Refrigerate for at least 4 hours or overnight, stirring once in the first 30 minutes for even absorption.
- Prepare the raspberry layer by mashing fresh raspberries or blending them for a smoother texture.
- Layer the chia pudding and raspberry mixture in serving glasses until full, garnishing with fresh raspberries and mint leaves.
- Serve chilled for best flavor.
Notes
Store in an airtight container in the refrigerator for up to 4-5 days. You can freeze for longer storage but texture may change after thawing.
