Ingredients

- 3 cups cooked jasmine rice
- 1/2 Tbsp fresh minced cilantro
- Salt (to taste)
- 1/2 lb shrimp (peeled and deveined)
- 1 tbsp lime juice
- 2 Tbsp pineapple juice
- 1/4–1/2 tsp chili powder (to taste)
- 8 oz can of pineapple chunks (drained but save the juice)
- 1/2 cup pineapple juice (for sauce)
- 3 Tbsp soy sauce
- 2 Tbsp honey
- Zest from 1 lime
- Juice from 1 lime
- 1/2 tsp chili powder (for sauce)
- 1 Tbsp fresh minced cilantro (for sauce)
Instructions
- Cook the Rice: Start by bringing a pot of salted water to a boil. Once boiling, add the jasmine rice and follow package instructions for 15-20 minutes. Fluff the rice with a fork and fold in the minced cilantro.
- Prepare the Sauce: Combine 1/2 cup pineapple juice, soy sauce, honey, lime juice, lime zest, 1/2 teaspoon chili powder, and cilantro in a mixing bowl. Whisk until well mixed.
- Marinate the Shrimp: Mix the shrimp with lime juice, pineapple juice, and chili powder. Let marinate for 10-15 minutes.
- Cook the Shrimp: Heat a skillet over medium-high heat, and add oil. Cook the marinated shrimp for 1-2 minutes on each side until pink and opaque. Remove and set aside.
- Cook the Pineapple: In the same pan, lower heat and add drained pineapple chunks. Sear for 3-4 minutes until caramelized.
- Combine Sauce and Shrimp: Pour the prepared sauce into the pan with pineapple and simmer for 2-3 minutes. Add shrimp to warm through in the sauce.
- Assemble the Bowls: Divide jasmine rice into bowls and top with shrimp and pineapple mixture, along with sauce.
- Serve Warm: Garnish with lime wedges and fresh cilantro if desired.

For added flavor, serve with lime wedges and fresh cilantro. Can customize with additional vegetables or protein options.
