- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup cooked and mashed sweet potatoes
- 1/4 cup honey
- 1/4 cup milk
- 1/4 cup butter, melted
- 2 large eggs
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish with butter or oil.
- Mix the dry ingredients: cornmeal, flour, baking powder, and salt in a large bowl.
- Combine the wet ingredients: sweet potatoes, honey, milk, melted butter, and eggs in another bowl.
- Combine the wet mixture with the dry ingredients, stirring gently until just combined.
- Prepare the batter by pouring it into the greased baking dish and smoothing the top.
- Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Cool slightly before cutting into squares and serve warm.
