Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cooked and mashed sweet potatoes
  • 1/4 cup honey
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with butter or oil.
  2. Mix the dry ingredients: cornmeal, flour, baking powder, and salt in a large bowl.
  3. Combine the wet ingredients: sweet potatoes, honey, milk, melted butter, and eggs in another bowl.
  4. Combine the wet mixture with the dry ingredients, stirring gently until just combined.
  5. Prepare the batter by pouring it into the greased baking dish and smoothing the top.
  6. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  7. Cool slightly before cutting into squares and serve warm.
