- 3 cups rhubarb (chopped into 1-inch pieces)
- 3 cups fresh strawberries (hulled and quartered)
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 3/4 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter (cut into small cubes)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine rhubarb and strawberries in a large bowl with sugar, flour, and vanilla; toss gently.
- Mix oats, flour, brown sugar, cinnamon, and salt in another bowl; add butter and mix until crumbly.
- Grease a baking dish and pour in the fruit filling, then sprinkle the oat topping over it.
- Bake for 40-50 minutes until golden brown and bubbling.
- Cool for 10-15 minutes before serving.
Notes
Serve warm with ice cream or whipped cream for an indulgent treat. Adjust sweetness according to taste.
