- 2 bell peppers, chopped
- 1 onion, chopped
- 2 cups beef stock
- 1 can diced tomatoes
- Salt and pepper to taste
- 1 cup cooked rice (optional)

Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a large skillet over medium heat for 6-8 minutes until no longer pink, draining excess fat.
- Sauté the chopped bell peppers and onion for 4-5 minutes until tender.
- Add the beef stock and diced tomatoes, seasoning with salt and pepper.
- Mix in cooked rice if using.
- Transfer the mixture to a greased casserole dish, spreading evenly.
- Top with cheese if desired.
- Bake for about 30 minutes until cheese is melted and bubbly.
- Cool for a few minutes before serving.
