- 2 Chicken breasts
- 1 cup Orzo pasta
- 3 cloves Garlic, minced
- 1 Lemon, juiced
- 2 tablespoons Olive oil
- 2 cups Chicken broth
- 1 teaspoon Salt
- 1 teaspoon Pepper
- Fresh herbs (optional, like parsley or basil)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper. Heat olive oil in a large oven-safe pan over medium heat and sear the chicken for 5-6 minutes on each side.
- Remove the chicken from the pan and set aside. Add minced garlic to the pan and cook for 1 minute until fragrant.
- Add the orzo pasta and stir for 1-2 minutes to toast it lightly.
- Pour in the chicken broth and squeeze the lemon juice. Stir to combine.
- Nestle the chicken back into the pan, pressing it down into the liquid.
- Bake covered for 20-25 minutes until the chicken is cooked through and orzo is tender.
- Garnish with fresh herbs and serve warm.
Notes
For added flavor, consider using bone-in chicken thighs and adding your favorite vegetables like spinach or bell peppers.
