Ingredients

  • 2 Chicken breasts
  • 1 cup Orzo pasta
  • 3 cloves Garlic, minced
  • 1 Lemon, juiced
  • 2 tablespoons Olive oil
  • 2 cups Chicken broth
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • Fresh herbs (optional, like parsley or basil)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper. Heat olive oil in a large oven-safe pan over medium heat and sear the chicken for 5-6 minutes on each side.
  3. Remove the chicken from the pan and set aside. Add minced garlic to the pan and cook for 1 minute until fragrant.
  4. Add the orzo pasta and stir for 1-2 minutes to toast it lightly.
  5. Pour in the chicken broth and squeeze the lemon juice. Stir to combine.
  6. Nestle the chicken back into the pan, pressing it down into the liquid.
  7. Bake covered for 20-25 minutes until the chicken is cooked through and orzo is tender.
  8. Garnish with fresh herbs and serve warm.

Notes

For added flavor, consider using bone-in chicken thighs and adding your favorite vegetables like spinach or bell peppers.
