- 1/4 cup granulated sugar
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 sleeve graham crackers (or 1.5 cups graham cracker crumbs)
- 1/4 cup unsalted butter, melted
- Two 8-ounce blocks of cream cheese, softened
- 14-ounce can of sweetened condensed milk
- 1 teaspoon vanilla paste or vanilla extract
Instructions
- Prepare the strawberries by washing, drying, and slicing them. Combine with sugar, lemon zest, and juice; let sit for 15-30 minutes.
- Make the graham cracker crumbs by crushing them and mixing with melted butter.
- Whip the cream cheese until smooth, then add sweetened condensed milk gradually and stir in vanilla.
- Assemble the parfaits in glasses, layering graham cracker mixture, cheesecake filling, and strawberries.
- Chill the parfaits in the refrigerator for at least 2 hours before serving.
Notes
For the best flavor, use ripe strawberries. The parfaits can be prepared a day in advance.
