- 1 lb chicken thighs
- 1/4 cup fresh parsley, chopped
- 1/4 cup cilantro, chopped
- 4 cloves garlic (2 for marinating chicken, 2 for spinach)
- Juice of 2 limes
- 2 ripe plantains
- 1 can black beans (15 oz)
- 4 cups spinach
- Mojo crema (store-bought or homemade)
- Pickled red onions (for topping)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Marinate the chicken by combining parsley, cilantro, minced garlic, lime juice, salt, and pepper. Coat chicken thighs and refrigerate for at least 1 hour.
- Cook the chicken in a skillet over medium heat for 6-7 minutes on each side until golden brown and cooked through.
- Prepare the plantains by slicing and frying them in oil until golden brown and crispy.
- Sauté the garlic in olive oil, then add spinach and season until wilted.
- Heat the black beans in a small pot until warmed through.
- Assemble your bowl starting with spinach, followed by chicken, plantains, and black beans, topped with mojo crema and pickled onions.
- Serve warm and enjoy!
