- 1 lb chicken thighs
- 1/4 cup fresh parsley, chopped
- 1/4 cup cilantro, chopped
- 4 cloves garlic, minced (2 for marinating chicken, 2 for spinach)
- Juice of 2 limes
- 2 ripe plantains
- 1 can black beans (15 oz)
- 4 cups spinach
- Mojo crema (store-bought or homemade)
- Pickled red onions (for topping)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Marinate the Chicken: In a bowl, combine parsley, cilantro, 2 minced cloves of garlic, lime juice, salt, and pepper. Coat the chicken thighs in the marinade. Cover and refrigerate for at least 1 hour.
- Cook the Chicken: Heat a skillet over medium heat with oil. Remove chicken from marinade and cook for about 6-7 minutes on each side until fully cooked. Let it rest before slicing.
- Prepare the Plantains: Peel and slice the plantains into 1-inch pieces. Fry them in hot oil for about 3-4 minutes on each side until golden brown. Drain on paper towels.
- Sauté the Spinach: In the skillet, add more oil if needed and sauté the remaining garlic for 30 seconds. Add spinach and cook until wilted, about 2-3 minutes.
- Heat the Black Beans: Rinse the black beans and heat them in a pot for about 5 minutes, seasoning with salt and pepper.
- Assemble the Bowl: Layer the sautéed spinach, sliced chicken, crispy plantains, and warmed black beans in a serving bowl. Drizzle with mojo crema and top with pickled red onions.
- Serve and Enjoy: Customize with additional toppings and enjoy your flavorful bowl!
Notes
For a vegetarian option, substitute chicken with marinated tofu or tempeh. Consider adding other veggies or different grains for variation.
