Instructions

  1. Prepare the cream cheese mixture: In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract, and blend until smooth.
  2. Fold in the whipped cream gently until no streaks remain.
  3. Combine the graham cracker crust by mixing crushed graham crackers with melted butter.
  4. Create the crust in mini cupcake liners, pressing the graham cracker mixture down firmly.
  5. Fill the lined crusts with the cream cheese mixture, leaving space for strawberries.
  6. Top with sliced strawberries, arranging them as desired.
  7. Chill the cheesecakes in the refrigerator for at least one hour to set.
  8. Dust with powdered sugar if desired before serving.
