Description

Hearty Mediterranean Steak Bowls featuring tender sirloin steak, roasted vegetables, and fluffy quinoa topped with creamy tzatziki sauce.


Ingredients

  • 1 lb sirloin steak
  • 2 cups assorted vegetables (bell peppers, zucchini, cherry tomatoes)
  • 1 cup quinoa
  • 1 cup Greek yogurt
  • 1 cucumber
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • Lemon juice
  • Salt and pepper
  • Fresh dill (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook quinoa by rinsing it under cold water, then cooking according to package instructions.
  3. Prepare the assorted vegetables by washing and chopping them.
  4. Toss the chopped vegetables in olive oil, salt, and pepper.
  5. Roast the vegetables on a baking sheet for about 20-25 minutes.
  6. Cook the steak in a skillet over medium-high heat for 4-5 minutes on each side.
  7. Make the tzatziki sauce by mixing grated cucumber, Greek yogurt, minced garlic, lemon juice, and salt.
  8. Assemble the bowls with quinoa, roasted vegetables, sliced steak, and tzatziki sauce.

Notes

Store leftovers separately in airtight containers. Quinoa and tzatziki can last 3-4 days; steak and vegetables should be eaten within 2-3 days.
