Ingredients

- 1 lb sirloin steak
- 2 cups assorted vegetables (bell peppers, zucchini, cherry tomatoes)
- 1 cup quinoa
- 1 cup Greek yogurt
- 1 cucumber
- 2 cloves garlic
- 1 tablespoon olive oil
- Lemon juice
- Salt and pepper
- Fresh dill (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cook quinoa by rinsing it under cold water, then cooking according to package instructions.
- Prepare the assorted vegetables by washing and chopping them.
- Toss the chopped vegetables in olive oil, salt, and pepper.
- Roast the vegetables on a baking sheet for about 20-25 minutes.
- Cook the steak in a skillet over medium-high heat for 4-5 minutes on each side.
- Make the tzatziki sauce by mixing grated cucumber, Greek yogurt, minced garlic, lemon juice, and salt.
- Assemble the bowls with quinoa, roasted vegetables, sliced steak, and tzatziki sauce.
Notes
Store leftovers separately in airtight containers. Quinoa and tzatziki can last 3-4 days; steak and vegetables should be eaten within 2-3 days.
