Ingredients

  • 1/2 cup extra-virgin olive oil (120 ml)
  • 1/3 cup lemon juice (80 ml)
  • 1 tablespoon fresh lemon zest
  • 6 large garlic cloves, minced
  • 2 teaspoons dried oregano or 2 tablespoons fresh
  • 1 teaspoon dried rosemary or 1 tablespoon fresh
  • 1 teaspoon dried thyme or 1 tablespoon fresh
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 23 pounds boneless, skinless chicken thighs

Instructions

  1. Start by gathering all the ingredients together.
  2. In a large bowl or zip-lock bag, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried rosemary, dried thyme, sea salt, ground black pepper, and ground nutmeg (if using).
  3. Add the chicken: Place the boneless, skinless chicken thighs in the bowl or bag with the marinade and mix until fully coated.
  4. Cover the bowl with plastic wrap or seal the zip-lock bag and let the chicken marinate for at least 30 minutes.
  5. Remove the chicken from the fridge about 20-30 minutes before cooking to ensure even cooking.
  6. Warm a large skillet or cast iron pan over medium-high heat, add cooking oil, and when hot, add the marinated chicken.
  7. Cook the chicken undisturbed for about 8-10 minutes.
  8. Flip the chicken, cook the other side for another 10-12 minutes until it reaches an internal temperature of 165°F (74°C).
  9. Remove the chicken from the pan and let it rest for a few minutes.
  10. Serve with fresh herbs and lemon wedges, if desired.

Notes

Use fresh ingredients for better flavor; chicken thighs are recommended for tenderness.
