Instructions
- Preheat your oven to 350°F (175°C).
- Combine the graham cracker crumbs and melted butter in a large bowl, mixing well until evenly coated.
- Grease an 8-inch square baking dish with cooking spray or butter.
- Press the crumb mixture firmly into the bottom of the prepared dish to form the crust.
- Whisk together the sugar and eggs in another bowl until smooth and creamy.
- Add in the lemon juice, lemon zest, and baking powder, whisking until fully combined.
- Pour the lemon filling over the crust and spread it out evenly.
- Bake in the preheated oven for about 20 to 25 minutes until the edges are lightly golden and the filling is set.
- Cool at room temperature for 10 minutes, then refrigerate for at least 2 hours.
- Slice into squares and serve with a sprinkle of powdered sugar on top.
