Description

  • 1/2 cup melted butter
  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs and melted butter in a large bowl, mixing well until evenly coated.
  3. Grease an 8-inch square baking dish with cooking spray or butter.
  4. Press the crumb mixture firmly into the bottom of the prepared dish to form the crust.
  5. Whisk together the sugar and eggs in another bowl until smooth and creamy.
  6. Add in the lemon juice, lemon zest, and baking powder, whisking until fully combined.
  7. Pour the lemon filling over the crust and spread it out evenly.
  8. Bake in the preheated oven for about 20 to 25 minutes until the edges are lightly golden and the filling is set.
  9. Cool at room temperature for 10 minutes, then refrigerate for at least 2 hours.
  10. Slice into squares and serve with a sprinkle of powdered sugar on top.
