- 8 oz pasta (such as fusilli or penne)
- 2 cups arugula, washed
- 1 lemon (juice and zest)
- 1/4 cup olive oil
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, about 8 to 10 minutes.
- Drain the pasta in a colander and rinse under cold water to cool.
- Combine in a large bowl the cooled pasta, arugula, halved cherry tomatoes, and grated Parmesan cheese.
- Make the dressing by whisking together lemon juice, lemon zest, olive oil, salt, and pepper in a small bowl.
- Dress the salad by pouring the dressing over the mixture and tossing gently until coated.
- Serve immediately or refrigerate for later. Flavors will meld beautifully if allowed to sit.
