Description

Delicious and nutritious hummus veggie wraps packed with fresh vegetables and creamy hummus, perfect for lunch or a snack.


Ingredients

  • 4 large whole wheat tortillas
  • 1 cup homemade hummus
  • 1 cucumber, sliced
  • 1 bell pepper, sliced
  • 1 carrot, grated
  • 1 cup spinach or mixed greens
  • 1 avocado, sliced
  • Salt and pepper to taste

Instructions

  1. Spread the hummus evenly on each tortilla.
  2. Add the sliced cucumber, bell pepper, grated carrot, spinach, and avocado on top of the hummus.
  3. Season the wrap with salt and pepper to taste.
  4. Roll the tortilla tightly from one edge to the other.
  5. Cut the tortilla in half at a diagonal and serve immediately.

These wraps can be made ahead of time and stored in the refrigerator for up to two days.
