Ingredients

- 4 large whole wheat tortillas
- 1 cup homemade hummus
- 1 cucumber, sliced
- 1 bell pepper, sliced
- 1 carrot, grated
- 1 cup spinach or mixed greens
- 1 avocado, sliced
- Salt and pepper to taste
Instructions
- Spread the hummus evenly on each tortilla.
- Add the sliced cucumber, bell pepper, grated carrot, spinach, and avocado on top of the hummus.
- Season the wrap with salt and pepper to taste.
- Roll the tortilla tightly from one edge to the other.
- Cut the tortilla in half at a diagonal and serve immediately.

These wraps can be made ahead of time and stored in the refrigerator for up to two days.
