Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup low-fat ricotta cheese
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine chopped spinach, ricotta cheese, diced tomatoes, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  3. Cut a pocket into each chicken breast.
  4. Spoon the spinach mixture into each chicken breast pocket.
  5. Sear the chicken in olive oil over medium heat for 3-4 minutes on each side.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
  7. Let the chicken rest for a few minutes before serving.
