- 4 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup low-fat ricotta cheese
- 1/2 cup diced tomatoes (canned or fresh)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Combine chopped spinach, ricotta cheese, diced tomatoes, garlic powder, onion powder, salt, and pepper in a mixing bowl.
- Cut a pocket into each chicken breast.
- Spoon the spinach mixture into each chicken breast pocket.
- Sear the chicken in olive oil over medium heat for 3-4 minutes on each side.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
- Let the chicken rest for a few minutes before serving.
