Ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup milk (or dairy-free alternative)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by lightly greasing it or lining it with paper liners.
  3. Mix the rolled oats, cocoa powder, and salt in a mixing bowl.
  4. Combine almond butter, honey or maple syrup, vanilla extract, and milk in another bowl until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until well mixed.
  6. Add the dark chocolate chips and gently fold them into the mixture.
  7. Spoon the mixture into the muffin tin, filling each cavity about three-quarters full and pressing down lightly.
  8. Bake for 15–20 minutes or until the edges are golden brown.
  9. Cool in the muffin tin for 5 minutes before transferring to a wire rack to cool completely.
