  • 2 to 3 tablespoons lemon juice
  • 1+ teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 6 ounces crumbled feta cheese

Instructions

  1. Cook the orzo according to package directions, typically 8 to 10 minutes, then drain and set aside.
  2. Prepare the chicken and vegetables in a skillet with olive oil, cooking the onions until translucent.
  3. Add the diced chicken, season, and cook until golden brown and cooked through, about 5 minutes.
  4. Add minced garlic to the skillet and cook for an additional minute.
  5. Combine chicken and garlic with orzo, then add spinach until wilted.
  6. Add cucumber, tomatoes, lemon zest, and juice; stir to combine and adjust seasoning.
  7. Finish with feta cheese, gently stir to distribute.
  8. Serve immediately, drizzled with olive oil and lemon juice, optionally garnished with herbs.
