- ½ English cucumber, diced small
- 1.5 cups sliced cherry or grape tomatoes
- 1 teaspoon lemon zest
- 2 to 3 tablespoons lemon juice
- 1+ teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 6 ounces crumbled feta cheese
Instructions
- Cook the orzo according to package directions, typically 8 to 10 minutes, then drain and set aside.
- Prepare the chicken and vegetables in a skillet with olive oil, cooking the onions until translucent.
- Add the diced chicken, season, and cook until golden brown and cooked through, about 5 minutes.
- Add minced garlic to the skillet and cook for an additional minute.
- Combine chicken and garlic with orzo, then add spinach until wilted.
- Add cucumber, tomatoes, lemon zest, and juice; stir to combine and adjust seasoning.
- Finish with feta cheese, gently stir to distribute.
- Serve immediately, drizzled with olive oil and lemon juice, optionally garnished with herbs.
