Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes
  • 1 cup crumbled feta cheese
  • ½ cup plain Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 small clove garlic, minced
  • 1 tbsp chopped fresh dill
  • Warm pita bread, cut into triangles
  • Cherry tomatoes
  • Sliced cucumbers
  • Kalamata olives
  • Roasted red peppers
  • Fresh herbs (parsley, mint, or dill) for garnish

Instructions

  1. Marinate the Chicken: Whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper in a medium bowl. Add the chicken cubes and toss to coat. Cover and let marinate for at least 30 minutes.
  2. Prepare the Skewers: Soak wooden skewers in water for 30 minutes. Thread the marinated chicken onto the skewers.
  3. Grill the Chicken: Preheat the grill to medium-high heat. Cook the chicken skewers for about 8 to 10 minutes, turning occasionally until cooked through.
  4. Make the Feta Dip: Blend together crumbled feta, Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and dill until smooth.
  5. Assemble the Grazing Board: Arrange grilled skewers on a large board, add bowls of feta dip, and surround with pita, tomatoes, cucumbers, olives, and roasted peppers. Garnish with fresh herbs.

Notes

Marinate the chicken for longer for more flavor. Experiment with different vegetables on the board.
