- 1 teaspoon garlic powder
- 1 tablespoon fresh lime juice
- For Toppings:
- 1 cup shredded sharp cheddar cheese (or pepper jack)
- ½ cup diced red onions
- ½ cup sliced jalapeños (optional)
- Fresh cilantro leaves
Instructions
- Make the Firecracker Sauce: In a small mixing bowl, whisk together the mayonnaise, sriracha sauce, honey, smoked paprika, garlic powder, and fresh lime juice until smooth.
- Prep the Toppings: Dice the red onions, slice the jalapeños, shred your choice of cheese, and roughly chop fresh cilantro leaves.
- Heat the Grill: Preheat your grill to medium-high heat, about 400°F.
- Grill the Hot Dogs: Place hot dogs on the preheated grill and grill for about 5-7 minutes, turning occasionally.
- Toast the Buns: In the last 2 minutes of grilling, place the buns cut-side down on the grill.
- Assemble the Hot Dogs: Spread the Firecracker Sauce inside each toasted bun, add the grilled hot dog, and top with cheese, red onions, jalapeños, and cilantro.
