Description

A healthier alternative to store-bought nuggets made with chicken breast and a flavorful breadcrumb coating.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 eggs, beaten
  • Oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C) if baking.
  2. Mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Prepare the eggs by beating them in another bowl.
  4. Coat the chicken pieces in beaten eggs, then roll each piece in the breadcrumb mixture.
  5. Heat oil in a skillet over medium heat if frying, and cook the nuggets for 3-4 minutes on each side.
  6. Bake the nuggets on a baking sheet for 15-20 minutes, flipping halfway through.
  7. Cool the nuggets slightly on a wire rack before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
