Instructions

  1. Prepare the Couscous: Start by pouring the water or vegetable broth into a medium saucepan. Bring it to a boil over medium-high heat. Once boiling, carefully add the couscous and give it a quick stir. Next, cover the saucepan with a lid and remove it from heat. Let it sit for about 5 minutes. The couscous will absorb the liquid and become fluffy.
  2. Fluff the Couscous: After 5 minutes, use a fork to fluff the couscous gently. This will separate any grains that might have stuck together, making it light and airy.
  3. Combine the Vegetables: In a large mixing bowl, combine the fluffed couscous with the diced cucumbers, bell peppers, cherry tomatoes, finely chopped red onion, and fresh parsley. Stir the mixture gently to ensure even distribution of the vegetables.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Taste the dressing and adjust seasoning as needed.
  5. Dress the Salad: Pour the dressing over the couscous and vegetable mixture. Toss everything together until well coated.
  6. Serve or Refrigerate: You can serve immediately or refrigerate. If chilled, toss again before serving to ensure even distribution.
