  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the rigatoni pasta according to package instructions in salted water until al dente, about 8-10 minutes. Drain and reserve 1 cup of pasta water.
  2. Prepare the sausage in a large skillet by heating olive oil over medium heat and cooking the sausage, breaking it apart, until golden brown, about 5-7 minutes.
  3. Add minced garlic to the skillet and cook until fragrant, about 1-2 minutes.
  4. Make the cream sauce by pouring heavy cream into the skillet, bringing it to a simmer, and stirring in grated Parmesan until melted and creamy.
  5. Season the sauce with salt and pepper to taste.
  6. Combine the cooked rigatoni with the sauce, tossing to coat, and add reserved pasta water to adjust consistency if needed.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a lighter version, substitute half of the heavy cream with broth. Freshly grated cheese is recommended for the best flavor.
