- 1 lb sausage (Italian or your choice)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the rigatoni pasta according to package instructions in salted water until al dente, about 8-10 minutes. Drain and reserve 1 cup of pasta water.
- Prepare the sausage in a large skillet by heating olive oil over medium heat and cooking the sausage, breaking it apart, until golden brown, about 5-7 minutes.
- Add minced garlic to the skillet and cook until fragrant, about 1-2 minutes.
- Make the cream sauce by pouring heavy cream into the skillet, bringing it to a simmer, and stirring in grated Parmesan until melted and creamy.
- Season the sauce with salt and pepper to taste.
- Combine the cooked rigatoni with the sauce, tossing to coat, and add reserved pasta water to adjust consistency if needed.
- Serve hot, garnished with fresh parsley if desired.
Notes
For a lighter version, substitute half of the heavy cream with broth. Freshly grated cheese is recommended for the best flavor.
