- 2 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1 1/2 cups apricot preserves
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract
- 1/2 cup chopped walnuts
- 1/4 cup rolled oats
- Powdered sugar for dusting
Instructions
- Preheat the oven to 175°C (350°F).
- Prepare an 8×8-inch baking pan by lining it with parchment paper.
- Mix the all-purpose flour, granulated sugar, and salt in a large mixing bowl.
- Cut the cold cubed butter into the flour mixture until it resembles coarse crumbs.
- Press about two-thirds of the crumb mixture into the bottom of the prepared baking pan.
- Bake the crust for about 12 minutes or until lightly golden.
- Mix together the apricot preserves, lemon juice, and vanilla extract in a medium-sized bowl.
- Pour the apricot mixture over the warm crust.
- Add the remaining crumb mixture combined with chopped walnuts and rolled oats on top.
- Bake again for 25 to 30 minutes or until the top is golden brown.
- Cool the bars completely in the pan before slicing.
- Dust with powdered sugar and serve.
Notes
Use cold butter for a flaky texture and choose high-quality preserves for the best flavor.
