Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 1/2 cups apricot preserves
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1/4 cup rolled oats
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. Prepare an 8×8-inch baking pan by lining it with parchment paper.
  3. Mix the all-purpose flour, granulated sugar, and salt in a large mixing bowl.
  4. Cut the cold cubed butter into the flour mixture until it resembles coarse crumbs.
  5. Press about two-thirds of the crumb mixture into the bottom of the prepared baking pan.
  6. Bake the crust for about 12 minutes or until lightly golden.
  7. Mix together the apricot preserves, lemon juice, and vanilla extract in a medium-sized bowl.
  8. Pour the apricot mixture over the warm crust.
  9. Add the remaining crumb mixture combined with chopped walnuts and rolled oats on top.
  10. Bake again for 25 to 30 minutes or until the top is golden brown.
  11. Cool the bars completely in the pan before slicing.
  12. Dust with powdered sugar and serve.

Notes

Use cold butter for a flaky texture and choose high-quality preserves for the best flavor.
