  • 3 large eggs, room temperature
  • 2 large apples, chopped
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 tsp ground nutmeg
  • Sprinkle of lemon juice
  • 1/2 cup caramel sauce
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Prepare the crust: Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and ground cinnamon. Add melted butter and combine until it resembles wet sand. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
  2. Make the cheesecake filling: Beat cream cheese until smooth. Gradually add sugar and flour; mix well. Add sour cream, vanilla extract, and ground cinnamon, mixing until smooth.
  3. Add the eggs one at a time, mixing thoroughly after each addition. Gently fold in chopped apples.
  4. Prepare the apple mixture: Toss the chopped apples with brown sugar, ground cinnamon, ground nutmeg, and lemon juice.
  5. Assemble the cheesecake: Pour filling into the prepared crust, spreading evenly. Scatter apple mixture on top.
  6. Bake the cheesecake for 60-70 minutes until the center is set but slightly jiggly. Turn off the oven and leave cheesecake inside for an hour.
  7. Cool to room temperature and then refrigerate for at least 4 hours, or overnight.
  8. Prepare the whipped cream: Beat cold heavy whipping cream until thick. Gradually add powdered sugar, vanilla extract, and ground cinnamon. Beat until stiff peaks form.
  9. Serve by slicing the cheesecake and drizzling with caramel sauce. Add a dollop of whipped cream on the side.
