Ingredients
- Chicken pieces
- Onions
- Garlic
- Ginger
- Bell peppers
- Thyme
- Allspice
- Salt
- Black pepper
- Carrots
- Tomatoes
- Scotch bonnet pepper
- Soy sauce
- Water or chicken broth
Instructions
- Marinate the chicken pieces with salt, black pepper, thyme, allspice, and chopped Scotch bonnet pepper for at least an hour, or overnight for best results.
- Brown the marinated chicken in a pot over medium heat for 5 to 7 minutes, then set aside.
- Sauté chopped onions, minced garlic, grated ginger, and diced bell peppers until the onions are translucent, about 5 minutes.
- Combine the browned chicken back in the pot with chopped carrots, tomatoes, and soy sauce. Add enough water or broth to cover the chicken.
- Simmer for 30 to 40 minutes until the chicken is tender and cooked through.
- Adjust the seasoning to taste before serving.
