Description

Ingredients

  • Chicken pieces
  • Onions
  • Garlic
  • Ginger
  • Bell peppers
  • Thyme
  • Allspice
  • Salt
  • Black pepper
  • Carrots
  • Tomatoes
  • Scotch bonnet pepper
  • Soy sauce
  • Water or chicken broth

Instructions

  1. Marinate the chicken pieces with salt, black pepper, thyme, allspice, and chopped Scotch bonnet pepper for at least an hour, or overnight for best results.
  2. Brown the marinated chicken in a pot over medium heat for 5 to 7 minutes, then set aside.
  3. Sauté chopped onions, minced garlic, grated ginger, and diced bell peppers until the onions are translucent, about 5 minutes.
  4. Combine the browned chicken back in the pot with chopped carrots, tomatoes, and soy sauce. Add enough water or broth to cover the chicken.
  5. Simmer for 30 to 40 minutes until the chicken is tender and cooked through.
  6. Adjust the seasoning to taste before serving.
