Description

This delightful zucchini bread combines grated zucchini with sugar and warm spices for a moist and flavorful treat, perfect for snacks or breakfast.


Ingredients

  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two loaf pans with butter or non-stick spray.
  2. Mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. Combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
  4. Add the dry mixture to the wet zucchini mixture and stir gently until just combined, folding in nuts if using.
  5. Pour the batter into the greased loaf pans and smooth out the tops.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Cool in the pans for 10 minutes, then transfer to a wire rack.

Notes

For a sweeter loaf, add chocolate chips. Ensure to squeeze excess moisture from zucchini before mixing.
