- 2 cups grated zucchini
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease two loaf pans with butter or non-stick spray.
- Mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
- Add the dry mixture to the wet zucchini mixture and stir gently until just combined, folding in nuts if using.
- Pour the batter into the greased loaf pans and smooth out the tops.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Cool in the pans for 10 minutes, then transfer to a wire rack.
Notes
For a sweeter loaf, add chocolate chips. Ensure to squeeze excess moisture from zucchini before mixing.
