Ingredients

  • 8 oz pasta (fusilli or penne)
  • 1 can (5 oz) tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta by filling a large pot with water and adding a pinch of salt. Bring to a boil, add pasta, and cook according to package instructions. Drain and rinse under cold water.
  2. Prepare the vegetables by halving cherry tomatoes, dicing cucumber, and chopping red onion.
  3. Combine the cooled pasta, drained tuna, halved cherry tomatoes, diced cucumber, and chopped red onion in a large bowl.
  4. Make the dressing by mixing mayonnaise, lemon juice, salt, and pepper in a small bowl until well blended.
  5. Toss the salad by pouring the dressing over the pasta mixture and gently mixing until coated.
  6. Garnish with finely chopped parsley and refrigerate for at least 30 minutes before serving.

Notes

For a creamy salad, add more mayonnaise or use Greek yogurt for a healthier option. Customize with additional ingredients like bell peppers or olives.
