- 8 oz pasta (fusilli or penne)
- 1 can (5 oz) tuna, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta by filling a large pot with water and adding a pinch of salt. Bring to a boil, add pasta, and cook according to package instructions. Drain and rinse under cold water.
- Prepare the vegetables by halving cherry tomatoes, dicing cucumber, and chopping red onion.
- Combine the cooled pasta, drained tuna, halved cherry tomatoes, diced cucumber, and chopped red onion in a large bowl.
- Make the dressing by mixing mayonnaise, lemon juice, salt, and pepper in a small bowl until well blended.
- Toss the salad by pouring the dressing over the pasta mixture and gently mixing until coated.
- Garnish with finely chopped parsley and refrigerate for at least 30 minutes before serving.
Notes
For a creamy salad, add more mayonnaise or use Greek yogurt for a healthier option. Customize with additional ingredients like bell peppers or olives.
