- 6 large eggs
- 0.5 cup full-fat Greek yogurt
- 1 tablespoon baking powder
- 0.25 cup melted butter or coconut oil
- 0.25 teaspoon salt
- 0.5 teaspoon xanthan gum or psyllium husk powder
- 0.5 cup finely ground almond flour (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a loaf pan with parchment paper or grease it lightly.
- In a large mixing bowl, whisk the eggs until light and fluffy. Add Greek yogurt and melted butter or coconut oil, mixing until combined.
- In a separate bowl, mix baking powder, salt, xanthan gum or psyllium husk powder, and almond flour.
- Gradually add the dry ingredients to the wet mixture, folding gently to combine without over-mixing.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes or until golden and a toothpick inserted comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve plain, with toppings, or as a sandwich base. Store in an airtight container at room temperature for up to 3 days, in the fridge for a week, or freeze for up to 3 months.
