Description

A healthy, low-carb bread made with protein-rich ingredients, perfect for snacking or sandwiches.


Ingredients

  • 6 large eggs
  • 0.5 cup full-fat Greek yogurt
  • 1 tablespoon baking powder
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a loaf pan with parchment paper or grease it lightly.
  3. In a large mixing bowl, whisk the eggs until light and fluffy. Add Greek yogurt and melted butter or coconut oil, mixing until combined.
  4. In a separate bowl, mix baking powder, salt, xanthan gum or psyllium husk powder, and almond flour.
  5. Gradually add the dry ingredients to the wet mixture, folding gently to combine without over-mixing.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 30-35 minutes or until golden and a toothpick inserted comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve plain, with toppings, or as a sandwich base. Store in an airtight container at room temperature for up to 3 days, in the fridge for a week, or freeze for up to 3 months.
