A warm, comforting cobbler bursting with seasonal winter fruits like apples, pears, and cranberries, topped with a golden, buttery biscuit crust perfect for cozy nights in.
Ingredients
4 cups mixed winter fruit (such as apples, pears, and cranberries), peeled and chopped
1/2 cup granulated sugar
1 tbsp lemon juice
1 tsp cinnamon
1/4 tsp nutmeg
1 tbsp cornstarch
1 cup all-purpose flour
1/4 cup sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup cold unsalted butter, cubed
1/3 cup milk
1 tsp vanilla extract
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large bowl, toss the chopped fruits with sugar, lemon juice, cinnamon, nutmeg, and cornstarch.
3. Transfer the fruit mixture to a lightly greased 9-inch baking dish.
4. In another bowl, whisk together flour, sugar, baking powder, and salt.
5. Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
6. Stir in milk and vanilla extract just until combined.
7. Drop spoonfuls of the batter over the fruit mixture.
8. Bake for 35–40 minutes, or until the topping is golden and the fruit is bubbling.
9. Cool slightly before serving.
10. Serve warm with vanilla ice cream or whipped cream.
Notes
You can substitute cranberries with raspberries for a sweeter version.
Add a splash of orange zest to the fruit for extra brightness.
Leftovers can be stored in the fridge and reheated in the oven or microwave.
