Ingredients
1 cup crushed shortbread cookies
4 tbsp unsalted butter, melted
6 oz white chocolate, finely chopped
1 cup heavy whipping cream
2 tbsp powdered sugar
1 tsp vanilla extract

Instructions
1. Combine crushed shortbread cookies with melted butter.
2. Press mixture firmly into tartlet pans to form crusts.
3. Chill crusts for 20 minutes to set.
4. Melt white chocolate gently and let cool slightly.
5. Whip heavy cream with powdered sugar and vanilla to soft peaks.
6. Fold melted white chocolate into whipped cream until smooth.
7. Pipe or spoon mousse into prepared crusts.
8. Chill tartlets for at least 1 hour before serving.
9. Garnish with fresh berries if desired.
