Description
A cozy and creamy White Bean Soup made with tender white beans, vegetables, herbs, and a hint of garlic simple, hearty, and perfect for chilly days.
Ingredients
2 tbsp olive oil
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
3 cans (15 oz each) white beans, drained and rinsed
4 cups vegetable broth
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
1/2 tsp salt
1/4 tsp black pepper
Juice of 1/2 lemon
Fresh parsley for garnish
Instructions
1. In a large pot, heat olive oil over medium heat.
2. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
3. Stir in garlic and cook for 1 minute until fragrant.
4. Add white beans, vegetable broth, thyme, rosemary, bay leaf, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
6. Remove bay leaf and mash some of the beans in the pot for a creamier texture.
7. Stir in lemon juice, adjust seasoning, and garnish with parsley before serving.
Notes
Add a handful of spinach or kale for extra nutrients.
You can blend part of the soup for a smoother consistency.
Serve with crusty bread for a complete meal.
