Description

A delightful dish combining creamy whipped ricotta and sweet roasted grapes, perfect for breakfast, dessert, or as an appetizer.


Ingredients

  • 1 1/2 cups whole milk ricotta
  • 1/4 cup heavy cream
  • 1 tbsp honey
  • Pinch sea salt
  • 2 cups red seedless grapes
  • 1 tbsp olive oil
  • 1 1/2 tbsp honey (for the grapes)
  • 1 tsp fresh thyme leaves
  • Pinch flaky salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the grapes with olive oil, 1 1/2 tbsp honey, thyme, and flaky salt.
  3. Spread coated grapes on a baking sheet and roast for about 20 minutes until they burst.
  4. Let the grapes cool slightly.
  5. In a bowl, whip the ricotta, heavy cream, 1 tbsp honey, and sea salt until fluffy.
  6. In serving jars, layer the whipped ricotta and roasted grapes, repeating until full.
  7. Garnish with a drizzle of honey and fresh thyme leaves.

Notes

Use quality ricotta for the best flavor. Adjust the sweetness of the honey to your preference.
