Ingredients

1 package (15 mini) phyllo cups

4 oz feta cheese

2 oz cream cheese, softened

1 tbsp olive oil

1 tbsp lemon juice

1 tsp honey (plus more for drizzling)

1/4 cup chopped pistachios

Fresh thyme leaves for garnish (optional)


Instructions

1. Preheat oven to 350°F (175°C).

2. Place phyllo cups on a baking sheet and bake for 5 minutes until lightly crisped. Let cool slightly.

3. In a food processor, combine feta, cream cheese, olive oil, lemon juice, and honey. Blend until smooth and creamy.

4. Spoon or pipe the whipped feta mixture evenly into the cooled phyllo cups.

5. Top each with a drizzle of honey and a sprinkle of chopped pistachios.

6. Garnish with fresh thyme leaves if desired.

7. Serve immediately or refrigerate for up to 2 hours before serving.

Notes
