Ingredients
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
2 medium carrots, sliced
2 celery stalks, sliced
1 zucchini, diced
1 cup green beans, chopped
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 cup cabbage, chopped
1 tsp dried thyme
1 tsp Italian seasoning
Salt and black pepper, to taste
2 cups fresh spinach (added at the end)
Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, carrots, and celery; sauté for 4–5 minutes until softened.
3. Stir in zucchini, green beans, diced tomatoes, vegetable broth, cabbage, thyme, and Italian seasoning.
4. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, until vegetables are tender.
5. Season with salt and pepper to taste.
6. Stir in spinach and let wilt for 1–2 minutes before serving.
7. Ladle into bowls, garnish with fresh parsley, and enjoy warm.

Add cooked chicken or beans for extra protein.
