Ingredients
1 baguette, sliced into 1/2-inch rounds
2 tbsp olive oil (plus more for brushing)
3 cups mixed mushrooms (cremini, shiitake, oyster), sliced
3 garlic cloves, minced
1 tbsp balsamic vinegar
1 tbsp soy sauce or tamari
1 tsp fresh thyme leaves
Salt and black pepper to taste
Fresh parsley, chopped, for garnish
Optional: vegan cream cheese or cashew spread for layering
Instructions
1. Preheat oven to 400°F (200°C).
2. Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 6–8 minutes until golden.
3. Meanwhile, heat olive oil in a skillet over medium heat.
4. Add mushrooms and cook for 5–7 minutes until they release moisture and begin to brown.
5. Stir in garlic, balsamic vinegar, soy sauce, thyme, salt, and pepper; cook 2–3 more minutes until fragrant.
6. Spread vegan cream cheese or cashew spread on each toasted baguette slice (if using).
7. Top with the warm mushroom mixture.
8. Garnish with fresh parsley and serve immediately.
Notes
Use any mix of mushrooms for depth of flavor.
Add a drizzle of truffle oil before serving for a gourmet touch.
These are best served warm but can be enjoyed at room temperature too.
