Description
Soft, espresso-infused tiramisu cookies with a tender crumb, topped with a creamy mascarpone-style frosting and a dusting of cocoa powder all the classic tiramisu flavors in cookie form.
Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 tbsp instant espresso powder
1 tbsp hot water
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
4 oz cream cheese, softened
1/2 cup powdered sugar
1 tbsp heavy cream
Unsweetened cocoa powder for dusting
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. Dissolve espresso powder in hot water and set aside to cool.
3. In a bowl, cream butter and granulated sugar until light and fluffy.
4. Beat in egg, vanilla, and dissolved espresso mixture.
5. In a separate bowl, whisk flour, baking powder, and salt.
6. Gradually mix dry ingredients into wet ingredients until combined.
7. Scoop dough onto prepared baking sheets and slightly flatten.
8. Bake for 10–12 minutes until edges are set.
9. Cool cookies completely.
10. Beat cream cheese, powdered sugar, and heavy cream until smooth.
11. Spread frosting over cooled cookies and dust lightly with cocoa powder.
Notes
For a stronger coffee flavor, add an extra 1/2 teaspoon espresso powder.
Cookies must be completely cool before frosting.
Store frosted cookies in the refrigerator for best texture and flavor.
