Ingredients

1 lb ground chicken

1 tbsp vegetable oil

3 garlic cloves, minced

1 tbsp fresh ginger, grated

1 small red bell pepper, diced

1/2 cup shredded carrots

3 green onions, chopped

1/4 cup hoisin sauce

2 tbsp soy sauce

1 tbsp fish sauce

1 tbsp lime juice

1 tbsp rice vinegar

1 tsp chili garlic sauce (optional)

1/4 cup chopped fresh cilantro

1 head butter or romaine lettuce, leaves separated

1/4 cup crushed peanuts for garnish

Lime wedges for serving


Instructions

1. Heat vegetable oil in a large skillet over medium heat. Add garlic and ginger, sauté for 30 seconds until fragrant.

2. Add ground chicken and cook, breaking it up with a spatula, until browned and cooked through.

3. Stir in bell pepper and carrots; cook for another 2–3 minutes until vegetables are tender.

4. In a small bowl, whisk together hoisin sauce, soy sauce, fish sauce, lime juice, rice vinegar, and chili garlic sauce.

5. Pour sauce mixture over the chicken and stir to coat evenly. Cook for 1–2 more minutes until heated through.

6. Remove from heat and stir in chopped green onions and cilantro.

7. Spoon the chicken mixture into lettuce leaves, top with crushed peanuts, and serve with lime wedges.

Notes

Use ground turkey or tofu for an alternative protein option.

Add sliced water chestnuts for extra crunch.

Serve with a side of jasmine rice for a heartier meal.
