Description
A colorful, zesty mix of black-eyed peas, black beans, corn, and fresh veggies tossed in a tangy vinaigrette Texas Caviar is the ultimate crowd-pleasing dip or side salad.
Ingredients
1 can (15 oz) black-eyed peas, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 red bell pepper, diced
1 green bell pepper, diced
1 jalapeño, minced (optional)
1/2 small red onion, finely chopped
1/4 cup fresh cilantro, chopped
**Dressing:**
1/4 cup olive oil
1/4 cup red wine vinegar
1 tbsp lime juice
1 tbsp sugar (or honey)
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1/4 tsp chili powder
Instructions
1. In a large mixing bowl, combine black-eyed peas, black beans, corn, peppers, onion, jalapeño, and cilantro.
2. In a separate small bowl, whisk together olive oil, red wine vinegar, lime juice, sugar, salt, pepper, cumin, and chili powder.
3. Pour dressing over the bean mixture and toss gently to coat.
4. Cover and refrigerate for at least 1 hour to allow flavors to meld.
5. Serve chilled with tortilla chips or as a topping for grilled meats or tacos.
Notes
For extra kick, add diced tomatoes or hot sauce.
This dip tastes even better the next day after marinating overnight.
Make it heartier by adding avocado just before serving.
