Description
A hearty, comforting breakfast casserole made with crispy tater tots, savory sausage, eggs, and melty cheese. Perfect for brunch, holidays, or meal prep.
Ingredients
1 lb breakfast sausage
2 cups shredded cheddar cheese
1 (32 oz) bag frozen tater tots
8 large eggs
1 cup milk
1/2 cup heavy cream
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1/2 tsp salt
Optional: chopped green onions for topping
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
2. Cook sausage in a skillet over medium heat until browned; drain.
3. Spread the sausage evenly into the bottom of the baking dish.
4. Sprinkle shredded cheese over the sausage layer.
5. Add the frozen tater tots in an even layer on top.
6. In a bowl, whisk together eggs, milk, heavy cream, garlic powder, onion powder, salt, and pepper.
7. Pour the egg mixture evenly over the casserole.
8. Bake for 45–55 minutes, or until the center is set and the top is golden.
9. Let cool for 10 minutes before slicing. Top with green onions if desired.
Notes
For extra flavor, use spicy sausage.
Can be made ahead and refrigerated overnight before baking.
Swap cheddar for pepper jack or mozzarella.
