Description
Moist, buttery banana bread with a rich cinnamon-sugar swirl baked throughout a cozy twist on the classic that’s perfect for breakfast, brunch, or snacking.
Ingredients
2–3 ripe bananas, mashed (about 1 cup)
1/3 cup melted butter
3/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
1 1/2 cups all-purpose flour
For the cinnamon swirl:
1/3 cup brown sugar
1 tbsp ground cinnamon
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a large bowl, mash the bananas with a fork until smooth.
3. Stir in melted butter, brown sugar, egg, and vanilla until well combined.
4. Add baking soda, salt, and flour, stirring just until no dry streaks remain — do not overmix.
5. In a small bowl, mix the cinnamon and brown sugar for the swirl.
6. Pour half the batter into the prepared loaf pan, then sprinkle half of the cinnamon mixture over it.
7. Add the remaining batter on top and finish with the rest of the cinnamon mixture.
8. Use a knife to gently swirl the layers together.
9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Add chopped walnuts or pecans for extra crunch.
For a lighter version, replace half the butter with unsweetened applesauce.
