Description

Ingredients
3 large sweet potatoes, peeled and cut into 1-inch cubes
2 tbsp olive oil
1 tbsp pure maple syrup
1 tsp ground cinnamon
1/2 tsp smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish (optional)
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine sweet potato cubes, olive oil, maple syrup, cinnamon, smoked paprika, salt, and pepper.
3. Toss until evenly coated.
4. Spread sweet potatoes in a single layer on the prepared baking sheet.
5. Roast for 25–30 minutes, stirring halfway through, until golden and tender.
6. Transfer to a serving dish and garnish with parsley if desired.
Notes
For a savory twist, skip the maple syrup and toss with garlic powder and rosemary.
Add a sprinkle of brown sugar before baking for extra caramelization.
These reheat beautifully — just pop them back in the oven at 375°F for 10 minutes before serving.
