This Creamy Carrot & Sweet Potato Soup is smooth, comforting, and naturally sweet made with roasted vegetables, warm spices, and a touch of cream for a cozy, nutritious meal.
Ingredients
1 lb carrots, peeled and chopped
1 medium sweet potato, peeled and diced
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1/2 cup heavy cream (or coconut milk for dairy-free)
1/2 tsp ground ginger
1/4 tsp cinnamon
Salt and pepper to taste
Fresh herbs or pumpkin seeds for garnish
Instructions
1. Preheat oven to 400°F (200°C). Toss chopped carrots and sweet potato with olive oil, salt, and pepper. Roast for 25–30 minutes until tender.
2. In a large pot, sauté onion and garlic over medium heat until fragrant and translucent.
3. Add roasted vegetables to the pot along with vegetable broth, ginger, and cinnamon.
4. Bring to a simmer and cook for 10 minutes to blend flavors.
5. Use an immersion blender (or transfer to a blender) to puree until smooth.
6. Stir in cream, taste, and adjust seasoning as needed.
7. Serve warm, garnished with herbs or pumpkin seeds.
Notes
For extra richness, swirl in a bit of cream or Greek yogurt before serving.
Add a pinch of cayenne for a subtle kick.
