Description

These Sweet Potato Rounds are caramelized on the outside and tender on the inside  topped with creamy goat cheese, toasted pecans, and a drizzle of honey for the perfect sweet-savory bite.


Ingredients

2 large sweet potatoes, sliced into 1/2-inch rounds

2 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp cinnamon (optional)

4 oz goat cheese, softened

1/4 cup chopped pecans, toasted

2 tbsp honey (plus more for drizzling)

1 tbsp fresh thyme leaves (optional, for garnish)


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Slice sweet potatoes into even 1/2-inch rounds and arrange in a single layer.

3. Brush both sides with olive oil and sprinkle with salt, pepper, and cinnamon.

4. Roast for 20–25 minutes, flipping halfway, until golden and tender.

5. Allow to cool slightly, then spread each round with a bit of goat cheese.

6. Top with toasted pecans and drizzle lightly with honey.

7. Garnish with fresh thyme leaves if desired.

8. Serve warm or at room temperature.
