Ingredients
2 medium sweet potatoes, peeled and diced
2 apples, cored and diced (Honeycrisp or Gala work well)
2 tbsp unsalted butter
1 tbsp olive oil
2 tbsp maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
Salt and black pepper to taste
1/4 cup chopped pecans (optional)
Fresh thyme or rosemary for garnish
Instructions
1. Heat butter and olive oil in a large skillet over medium heat.
2. Add the diced sweet potatoes and cook for about 8–10 minutes, stirring occasionally, until they start to soften and caramelize.
3. Add diced apples, maple syrup, cinnamon, nutmeg, salt, and pepper.
4. Continue cooking for another 6–8 minutes, stirring often, until the apples are tender and the sweet potatoes are fully cooked.
5. Stir in chopped pecans if using and cook for 1 more minute.
6. Remove from heat and garnish with fresh thyme or rosemary before serving.
Notes
This dish pairs beautifully with roasted chicken, pork, or as part of a holiday spread.
Try adding a splash of apple cider or orange juice for extra flavor.
