Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×5-inch loaf pan by greasing it with butter or cooking spray.
- Cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
- Incorporate the mashed bananas and sour cream until smooth.
- Mix the dry ingredients: whisk together the flour, baking soda, and salt in a separate bowl.
- Combine the wet and dry ingredients gently until just incorporated.
- Add chopped nuts if desired, and fold them into the batter.
- Fill the prepared loaf pan with the batter and smooth the top.
- Bake for 60-70 minutes, checking for doneness with a toothpick at the 60-minute mark.
- Cool the bread in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
