Fluffy, high-protein cottage cheese pancakes with fresh strawberries and natural vanilla perfect for a balanced breakfast or snack.
Ingredients
1 cup cottage cheese
2 large eggs
1/2 cup oat flour (or blended oats)
1/2 tsp vanilla extract
1 tbsp honey or maple syrup (optional)
1/2 tsp baking powder
Pinch of salt
1/2 cup fresh strawberries, diced
Butter or oil for cooking
Extra strawberries for topping
Instructions
1. Blend cottage cheese, eggs, oat flour, vanilla, honey, baking powder, and salt until smooth.
2. Fold in diced strawberries.
3. Heat a nonstick skillet over medium heat and add a little butter or oil.
4. Pour about 1/4 cup batter per pancake.
5. Cook 2–3 minutes per side until golden and set.
6. Serve warm with extra strawberries and syrup if desired.
Notes
You can use Greek yogurt instead of cottage cheese.
Add chocolate chips for a dessert-style version.
Make them gluten-free by using certified GF oats.
