Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1/2 cup cold unsalted butter, cubed

2/3 cup milk or heavy cream

1 tsp vanilla extract

1 lb fresh strawberries, hulled and sliced

1/4 cup sugar (for strawberries)

1 cup heavy whipping cream

2 tbsp powdered sugar

1/2 tsp vanilla extract (for whipped cream)


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. In a large bowl, combine flour, sugar, baking powder, and salt.

3. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.

4. Stir in milk and vanilla until dough just comes together — do not overmix.

5. Turn dough onto a floured surface and gently pat into a 1-inch thick rectangle.

6. Cut into 6 rounds or squares and place on prepared baking sheet.

7. Bake for 12–15 minutes, until golden brown. Cool on a wire rack.

8. Meanwhile, toss sliced strawberries with 1/4 cup sugar and let sit for 15–20 minutes to release juices.

9. In a chilled bowl, whip heavy cream, powdered sugar, and vanilla until soft peaks form.

10. To assemble, slice shortcakes in half, layer with strawberries and whipped cream, then top with more cream and berries.

Notes

For extra flavor, add a touch of lemon zest to the biscuits.

Use cold butter for the flakiest texture.

You can substitute the biscuits with store-bought shortcakes or pound cake in a pinch.
