Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the flour, granulated sugar, baking powder, and salt in a large bowl.
- Cut the cold butter into small cubes and mix into the flour mixture until it resembles coarse crumbs.
- Fold in the diced strawberries gently to keep their shape.
- Mix the buttermilk, egg, and vanilla extract in another bowl, then stir into the dry ingredients.
- Knead the dough a few times on a floured surface, then pat into a circle about 1-inch thick.
- Place the scones onto the prepared baking sheet, ensuring space for rising.
- Bake for 15-20 minutes until golden brown.
- Whisk together powdered sugar and lemon juice for the glaze, then drizzle over warm scones.
- Serve warm with butter, cream cheese, or clotted cream.
