Description

A rich and decadent Strawberry Dark Chocolate Truffle Cake  layers of moist dark chocolate cake filled with silky chocolate ganache and topped with fresh strawberries for a luxurious Valentine’s Day dessert.


Ingredients

For the Cake:

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1/2 tsp salt

2 cups sugar

2 large eggs

1 cup buttermilk

1/2 cup vegetable oil

2 tsp vanilla extract

1 cup hot coffee (or hot water)

For the Ganache Filling:

8 oz dark chocolate, chopped

1 cup heavy cream

1 tbsp butter

For the Topping:

1 cup fresh strawberries, halved

2 oz dark chocolate (for drizzle, optional)


Instructions

1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.

3. Add eggs, buttermilk, oil, and vanilla; beat until smooth.

4. Slowly pour in hot coffee and mix until fully combined (batter will be thin).

5. Divide batter evenly between pans and bake for 30–35 minutes, or until a toothpick comes out clean.

6. Cool cakes in pans for 10 minutes, then remove and let cool completely on a wire rack.

7. To make the ganache, heat heavy cream in a saucepan until just simmering.

8. Pour over chopped dark chocolate and let sit for 2 minutes, then whisk until smooth and glossy.

9. Stir in butter until melted. Let cool until slightly thickened.

10. Spread ganache between the cake layers and over the top.

11. Arrange fresh strawberry halves on top and drizzle with melted dark chocolate if desired.

12. Chill for at least 30 minutes before serving.

Notes

Use espresso instead of coffee for an even richer chocolate flavor.

This cake keeps well in the fridge for up to 3 days.

Add a splash of strawberry liqueur to the ganache for a romantic twist.
